How to Make Popcorn

Making popcorn yourself is not difficult, you just have to pop corn kernels in the microwave or in a pan with a lid. For this rainbow popcorn recipe you need a packet of microwave popcorn or just corn kernels.

We use 180 grams (1 ½ cup) of corn kernels, so that we can have enough popcorn to make all colors. Eventually we have about 8 small portions.

Don’t use sweet microwave popcorn, because we make rainbow popcorn with colored sugar. With a packet of sweet popcorn and the sugar, the popcorn will be a little too sweet. Follow the microwave popcorn package instructions to pop the popcorn.

If you buy a bag of corn kernels, you can pop it in a pan with a lid. Heat oil in a pan with a lid and make sure it is hot. You can test whether the pan is hot enough by putting a few corn kernels in the pan, if they pop right away, the pan is hot enough.

Cover the bottom of the pan with corn kernels and roasts! Make sure to put the lid on the pan, otherwise the popcorn will fly through your kitchen. Do not put more than one layer of corn kernels in the pan at a time, otherwise the popped popcorn won’t fit.

Rainbow Popcorn

Divide 18 tablespoons of sugar between 6 sealable containers / ziploc bags / jars (3 tablespoons per jar). Use what container you find most convenient, we use 6 different jars with lid.

Add a few drops of liquid food coloring or a pinch of gel food coloring to each jar of sugar. Use the following colors: red, orange, yellow, green, blue and purple.

Do you only have the colors red, yellow and blue? Make orange with red and yellow. You make green with yellow and blue, purple with blue and red.

Once the coloring has been added to the sugar, the shaking / kneading can begin! Shake or knead until the sugar is evenly colored.

How do you make caramel popcorn in the rainbow colors? Heat 1 color sugar with 1 teaspoon of water in a saucepan over medium heat.

Do not stir the sugar but wait until it has melted. Don’t let the sugar burn. This might take some practice.

Remove the pan from the heat when the sugar is liquid and stir 2 hands of popcorn into the colored liquid. Then let the colored popcorn cool on a plate.

The popcorn will stick together, but that’s okay. When the popcorn has cooled you can take the popcorn apart. Repeat with the other colors (in a clean pan).

Optional: add a knob of butter to the pan with the melted colored sugar before adding the popcorn.

The sugar will start to bubble a lot, but stir now, until you have a nice sauce. Use salted popcorn for salted caramel popcorn. Then you can mix in the popcorn.

How to Store Popcorn

You can store popcorn in a preserving jar or container with a lid in a dry, cool place. As long as it is airtight, the popcorn will remain crispy for a long time (2-3 weeks even)!

Do not put the container in the refrigerator, the popcorn will dry out. Always determine by seeing, smelling and tasting whether the popcorn is still good.

Ingredients

  • 1 ½ cup corn kernels (180 gram)
  • food coloring
  • 18 tbsp sugar
  • 6 tsp water

Instructions

  1. Pop the corn kernels according to the instructions (in pan or microwave).
  2. Make 6 colors of sugar (red, orange, yellow, green, blue, purple). Grab 6 sealable containers / zip loc bags / jars and scoop 3 tbsp sugar in each jar. Add food coloring to each jar. Use a few drops of liquid food coloring or a pinch of gel food coloring. Shake / knead until the sugar is evenly colored.
  3. Do you only have the colors red, yellow and blue? Make orange with red + yellow, green with yellow + blue and purple with blue + red.
  4. Heat 1 color sugar with 1 tsp water in a pan over medium high heat (not too low, otherwise the sugar won't melt). The sugar should be melted/caramelized (don't stir!), but not burned. This might take some practice!
  5. Remove the pan from the heat and stir 2 hands of popcorn into the colored syrup. Place the colored popcorn on a plate to cool. Clumps are okay, break them apart later.
  6. Repeat with the other colors.
  7. Optional: mix a knob of butter* into the mixture before tossing in the popcorn. The caramel is now going to bubble a lot, but keep stirring until you have a nice sauce. Then stir the popcorn into the mixture.

*use salted butter for caramel sea salt popcorn!
